CHRM 2120 - Garde Manger 4 Credits Students study traditional upscale pantry preparation. Students practice techniques for artistic displays of hors d’oeuvres, canapes, pates, terrines, and charcuterie. Students also practice artisan food preservation.
Prerequisites: (1) CHRM 1999 must be completed prior to taking this course. Lec: 0.5 Lab: 10.5 Cr: 4
