CULI 2710 - Food Preservation

Students develop an understanding of traditional food preservation methods, creating a variety of value-added products safely within local food code regulations.  

Prerequisites: (1) CULI 2610 or CULI 2650 must be completed prior to this course.

Course Objectives
  1. Demonstrate understanding of how to apply local food code regulations to food preservation methods. 
  2. Identify and apply a variety of food preservation techniques.  
  3. Justify product & labor costs of different value-added products.  
  4. Implement and evaluate current sustainability methods. 
  5. Create and evaluate a variety of preserved foods.
